Mango & Goat's Cheese Delight

Carole's Chatter: Mango & Goat's Cheese Delight

Another summer salad.  If it's not summer where you are I hope this will help you look forward to your summer.


Fresh mango
Goat's Cheese – Chevre
Parsley (for colour)
Fish sauce – just a touch
Black pepper
Lemon juice
Extra virgin olive oil


Slice your mango and cut the skin and pip out – all while trying not to stain a white shirt.

Put it in a shallow bowl and crumble the cheese on top.

Grind lots of black pepper onto it.

Sprinkle your roughtly chopped parsley.

Make a little dressing with the lemon juice, fish sauce and olive oil.  Drizzle it over the top (A confession I just separately drizzled each element rather than combining them first and it worked out just fine).


  1. I can guarantee that if I wear a white shirt, there will be a disaster, whether it be food or otherwise!!
