I have now replaced my large (6l) slow cooker with a 4l
one. I think it will be much better for
us. The first thing I did with it was
this invented Slow Cooker Sausage &
Bean Cassoulet – I'm not sure it is a cassoulet – maybe just a casserole or
stew? Given I just tossed a few things
together without a recipe it turned out very well.
Ingredients:
Tin of beans (containing 4 different kinds) – drained
4 pork sausages (honey mustard flavour) – put in whole
1 ½ chorizo – chopped up
Tin of tomato soup
Worcestershire Sauce
Splash of sherry which I swished around the tomato soup
can to rinse it out
Spoonful of crème fraiche and lemon juice
Cayenne pepper
Salt and pepper
Handful of rice (don't put too much in)
Method:
I just bunged everything into the slow cooker and left
it on low for about 4 hours. I added some
chopped herbs at serving time for a little pop of colour.
I often make sausage style dinners in the slow cooker they always go so tender after slow cooking and it's an inexpensive dinner too :)
