Stir fry of peppered prawns with snow peas



I haven't made peppered prawn and snow pea stir fry for years.  My friend Annie gave me the idea originally – it is a great dish because it ticks all the boxes – looks great, tastes great and very quick and easy to do.

There are only 4 things you need.  Vegetable oil for the stir frying.  Some cooked or raw prawns or shrimp (shells off – except for the tail bit), a packet of snow peas and lots of cracked black pepper.  Yep, that's all.

It takes 5 minutes max to cook (add a minute if you are using raw prawns).  You could use frozen prawns but I would defrost them first and dry them a bit with a kitchen paper towel.  Just stir fry in a hot wok or large pan.


Serve the peppered prawns and snow peas with noodles or rice.  For the eagle eyed among you you will have noticed a couple of scallops in there as well – they were left over from another dish.
