In her chapter on salad greens Stephanie Alexander gives a list of what can be in what she calls "composed salads" – what she means is that you have a base (salad leaves, green beans, lentils or white beans), then add some crunch and then a substantial focus such as a protein, cheese or vegetable. And then of course a dressing.
Composed salads can include:
|Chestnuts||Chick peas||Dried beans||Eggplants (aubergine)|
|Smoked fish||Squid||Sweet peppers||walnuts|
Now I wouldn't put in grapes or pears myself – but then I'm biased about fruit in savoury salads.
Her list of salad garnishes:
|Grilled polenta||Olives||Pine nuts|
|Toasted sesame seeds||Walnuts|
And things that you can find in salad dressings:
|Citrus juices||Crushed spices||Hazelnut oil|
|Olive oil||Pickles||Roasting juices|
|Sour cream||Wine vinegar|
